Strawberry Daiquiri Cupcakes
I absolutely love baking with alcohol, so any chance I get to do so, I take it. My friend had just graduated from college and placed a big cupcake order with me for her party. She chose my Mojito Cupcakes and these pretty little Strawberry Daiquiri Cupcakes. They are light and refreshing with all the flavors of a real daiquiri. The vodka, strawberry, and sweetness of these cute little desserts makes one deliciously boozy (in a good way) cupcake topped with yummy Rum Buttercream Frosting.
Ingredients:
For the Cupcakes:
2 teaspoons lime zest
2 tablespoons fresh lime juice
2 tablespoons light rum
1 (18 1/4 ounce) box strawberry cake mix
1 cup water
1/3 cup applesauce
3 eggs
For the Rum Buttercream Frosting:
1/2 cup butter, softened
3 1/2 cups powdered sugar
1/4 teaspoon rum flavoring
1 tablespoon milk
Directions:
1. In a 2 cup measuring cup, combine lime peel and juice with rum; add water to bring liquid up to 1 1/4 cups.
2. Beat cake mix, lime/rum/water mixture, apple sauce, and eggs in large bowl on low speed for 30 seconds, then on medium speed for 1-2 minutes.

3. Line 24 muffin cups with paper baking cups. Spoon batter into muffin cups, filling them about 2/3 full.
4. Bake in 350 degree oven 15-17 minutes (until a wooden toothpick inserted in center comes out clean). Remove cupcakes from pans immediately, place on wire racks and cool completely.
5. For the frosting: Cream butter until smooth and creamy, about 1-2 minutes. Add powdered sugar one cup at a time mixing until butter and sugar mixture is smooth between additions. Frosting should be mixed but firm. Add rum and milk and mix until creamy, but not runny.
