Carrot Cake Cupcakes with Cream Cheese Frosting
I never liked carrot cake cupcakes...until I had these! Wow, this recipe produces a heavenly carrot cake cupcake with a delectable cream cheese frosting - making anyone a carrot cake lover.
I found this recipe quite some time ago on a blog called Cooking Tip of the Day.
Here's what you need:
4 eggs
1 cup vegetable oil
1 cup white sugar
1 cup firmly packed brown sugar
3 teaspoons vanilla extract
2 ½ cups flour
1 tablespoon baking soda
1 tablespoons baking powder
½ teaspoon salt
2 teaspoons cinnamon
2 ½ cups grated carrots
1 cup or more chopped walnuts (optional but it adds a yummy crunch)
Preheat the oven to 350 degrees. Put the cupcake liners into muffin pan and set aside. In one bowl, beat eggs, oil, sugars and vanilla. In another bowl, combine flour, baking soda, baking powder, salt and cinnamon.
Add in the flour mixture a little at a time with mixer on medium speed, stir in the carrots. Put batter into cupcake liners, about 2/3 of the way full. Bake for about 20 mins or until toothpick comes out clean. Cool in the pan for 10 mins then remove and fully cool before frosting.

For cream cheese frosting simply beat these ingredients together until creamy:

1 (8 oz.) package of cream cheese, softened
3 cups confectioner’s sugar
1 teaspoon vanilla extract
