Salted Caramel Dark Chocolate Cookies
It was girls night and we wanted to bake and drink some wine. So, after much browsing on Pinterest, we found this amazing recipe from Sally's Baking Addiction website and decided to try it. The recipe is easy with few ingredients and the cookies taste as if they came from heaven.
Here's all you need:
Makes about 16-18 large cookies, or about 24 smaller ones
Here's what to do:
1. Cream the butter with a mixer on medium speed for about 20 seconds. Add the sugars while mixer is still running. Cream together until light and fluffy.
2. Beat in the egg and vanilla, scrape down sides of the bowl as needed.
3. In a separate medium sized bowl - sift flour cocoa powder, baking soda, and salt together. Then slowly add this to the wet ingredients.
4. Stir in the milk, then fold in the dark chocolate morsels. The dough will be thick and very sticky so chill it in the fridge for at least an hour (or until dough is firmer).
5. While the dough is chilling, preheat oven to 350 degrees F. Line a large baking sheet with parchment paper or silicone baking mat and set aside.
6. Once the dough is properly chilled, take 2 tablespoons of it and split in half, then roll each into a ball with your hands.

7. Stick a caramel into 1 ball of dough then top it with the other ball of dough and seal down the sides so that the caramel is completely stuffed inside the dough.
8. Repeat with the rest of the dough and sprinkle each with sea salt before putting it into the oven.
9. Bake for 12-13 minutes. Cookies will appear undone and very soft. Allow to cool on cookie sheet for at least 5 minutes before transferring to a wire rack to cool completely.
