Guitar Birthday Cake
While I was enjoying my vacation in Florida my friend told me his father's birthday was coming up and I decided to volunteer to make the cake when I got back. His father plays in a band so we wanted to do something with a guitar theme. When my vacation was (unfortunately) over, I came home and baked this beauty. It was a moist chocolate cake with a touch of espresso powder and a smooth vanilla butter cream frosting. I covered it in his father's favorite color, blue fondant, and piped on a little Happy Birthday message.
Graduation/Teacher Cake
My friend just graduated from college and she is becoming a teacher. She asked me to make a teacher/grad cake so I combined a chalkboard with a small stack of books to do the trick. I always use fondant with my cakes but this is the first time I used a lot of fondant and had to play around with different colors and sculpting. It came out pretty cute if you ask me! It wasn't too difficult either.
I baked an 11X15 marble cake with my vanilla buttercream frosting for the chalkboard. Then I used the same type of cake for the books but I made a 9X13 and simply cut it in half to make two shapes of books. Then I gave my arms a workout by rolling out fondant for the chalkboard, marbled some brown gel color with the white for the wood effect on the trim.
For the books I wrapped white fondant around the three sides that should have pages. Then I covered the rest with fondant and cut small strips for the top, bottom, and side to make it look like the bottom part of the book.

Girly Cowgirl Boot Cake
For that girly country-girl. A marble cake with sweet vanilla buttercream topped with a fondant horseshoe and fondant rope for all those cowgirls out there.

"Kit-Kat Cake"
I made this cake for my sisters birthday and it has become one of my signature cakes. I used Martha Stewart's delicious vanilla butter cake recipe combined with a Hershey's chocolate fudge recipe. I also added nuts and chocolate chips to the cake... and oh yeah, did I mention the irresistable kit-kat border, m&m's layer, and pretty ribbon?
Seashell Cake
I made this cake for my Nana's birthday. She loves the beach, so I died the buttercream blue by incorporating a very small amount of blue food coloring (using too much food coloring can result in an artificial taste).
I then made seashells out of chocolate, covered them with some petal dust, and spread brown sugar for the sand. Yummy.

Dots & Bow Cake
This was the first cake I ever made using fondant.
But, It's actually simple, it just takes practice as well as upper arm strength to roll out the fondant!
I used a Vanilla cake recipe with Vanilla Frosting from the Cake Boss book.
Vanilla Cake
- 2 1/2 Cups cake flour, plus more to flour cake pans
- 2 Cups sugar
- 3/4 Cup vegetable oil
- 2 1/4 Teaspoons baking powder
- 1 Teaspoon pure vanilla extract
- 1/2 Fine sea salt
- 4 Extra large eggs
- 1 Cup whole milk
*Use about 2 tablespoons of butter or nonstick spray to grease the pans with the flour
1. Preheat oven to 350 degrees F & make sure rack in the oven is centered.
2. Put flour, sugar, vegetable oil, baking powder, vanilla and salt in a bowl of a stand mixer with paddle attachment Mix until smooth.
3. With motor running, add one egg at a time, adding the next one after previous one has been absorbed. Stop motor periodically & scrape down sides of bowl with rubber spatula to ensure all ingredients are integrated.
4. After all eggs are added, continue to mix for 1 additional minute to ensure eggs have been mixed in thoroughly.
5. With motor running, add 1/2 cup of milk at a time and continue to mix for an extra minute until smooth. Before baking, make sure batter is between 70 degrees F to 73 degrees F, or the cake will crown.
6. Grease and flour 9 inch pans.
7. Divide batter evenly between the 2 cake pans.
8. Bake until cake begins to pull from side of pan and is springy to touch, which should be 25-30 minutes.
9. Remove cakes from oven and let cool for at least 30 mins, they should be at room temperature before removed from pan.
*refridgerate until ready to decorate.

Party girl's 21st Birthday Cake

and added some sprinkles into the batter to create a funfetti cake.
