Carrot Cake
My fathers favorite type of cake is carrot cake. So I wanted him to make him one he would never forget. I found this recipe a while ago and it is the most moist, delicious, and addicting carrot cake ever. Even for those who dont think they like carrot cake, this cake will make you a fan I promise! It made me one.
Ingredients:
•4 eggs
• 1 ¼ cups vegetable oil
•1 cup white sugar
•1 cup firmly packed brown sugar
•3 teaspoons vanilla extract
•2 cups flour
•2 teaspoons baking soda
•2 teaspoons baking powder
•½ teaspoon salt
•2 1/2 teaspoons cinnamon
•3 cups grated carrots
• 1 cup or more as desired, of chopped walnuts or pecans* (I used walnuts and prefer them
better)
*I topped this with my own fresh, home-made cream cheese frosting.
